University of Nebraska leads an international team of researchers in a study of the health benefits of fermented food. The process of fermentation creates bacteria that make certain foods healthier.

- [00:00:14.782]that the data is pretty strong
- [00:00:18.618]for health benefits for a number
- [00:00:20.403]of these different foods.
- [00:00:22.461]First thing that's important to realize
- [00:00:24.170]is that our gastrointestinal tract
- [00:00:26.760]is a huge reservoir
- [00:00:28.996]of microorganisms
- [00:00:30.806]and what they're doing there
- [00:00:32.734]is preventing unwanted foreigners,
- [00:00:35.700]perhaps like salmonella or listeria,
- [00:00:38.235]from gaining a foothold.
- [00:00:39.856]They're also communicating with their immune system,
- [00:00:42.445]they're providing nutrients and vitamins
- [00:00:45.199]that our body's unable to normally make on their own.
- [00:00:48.986]Fermented foods themselves have nutritional benefit
- [00:00:52.066]beyond that which occurs in the natural fluid
- [00:00:54.986]in the raw food from which it was made.
- [00:00:57.609]So yogurt is somehow healthier
- [00:00:59.739]than the milk from which it was made
- [00:01:01.717]and it's because of the microorganisms
- [00:01:04.551]that are in these foods
- [00:01:05.796]that perform the fermentation.
- [00:01:08.231]We're eating those microorganisms
- [00:01:10.401]when we eat a cup of yogurt.

- [00:01:14.346]our gastrointestinal tract

- [00:01:25.930]to consider fermented foods as its own category,
- [00:01:29.526]especially fermented foods that have live organisms.
