- [00:00:11.442]Chancellor Ronnie Green.
- [00:00:12.876]Fall Break was earlier this week,
- [00:00:14.204]couple quiet days on campus, but back into it.
- [00:00:16.913]I'm sure the students enjoyed a little bit
- [00:00:18.932]of a longer weekend to regroup a little bit.
- [00:00:20.580]Yeah, we certainly have had a great entry into fall,
- [00:00:23.926]beautiful kind of last couple weeks we've had in Lincoln.
- [00:00:26.796]As you said, the students got a couple reprieve days
- [00:00:30.035]in the middle of the semester this week,
- [00:00:32.373]so they kinda celebrated their Fall Break.
- [00:00:34.391]I had kids all over the place
- [00:00:35.683]doing service learning work on a lot of fronts.
- [00:00:38.890]And now they're back and ready for today's game.
- [00:00:41.567]Ready for this game and the rest
- [00:00:42.630]of the semester ahead of them.
- [00:00:43.586]I wanna talk today about the university,
- [00:00:45.127]the proud home of the Nebraska Food for Health Center.
- [00:00:47.199]Let's talk about that.
- [00:00:48.739]Well, a few weeks ago, during the Oregon game actually,
- [00:00:51.661]we celebrated the establishment of a new center,
- [00:00:55.539]the Nebraska Food for Health Center.
- [00:00:57.718]It's built upon work we've been doing
- [00:00:59.896]for a number of years in food science,
- [00:01:02.448]in gut microbiology, the microorganisms
- [00:01:05.847]that make up the digestive tract,
- [00:01:08.132]and there's literally millions and millions of them
- [00:01:10.097]in all digestive tracts, people's digestive tracts.
- [00:01:14.081]And the Raikes Foundation, Jeff and Tricia Raikes,
- [00:01:17.588]and Bill and Melinda Gates Foundation enabled us
- [00:01:21.041]to expand that effort now to a broader platform
- [00:01:24.760]that involves that group in food science
- [00:01:27.310]as well as collaborators at UNO,
- [00:01:29.328]as well as collaborators
- [00:01:30.483]at the University of Nebraska Medical Center
- [00:01:32.622]into this new Nebraska Food for Health Center,
- [00:01:35.438]where they're looking at all kinds
- [00:01:37.776]of food ingredients and inputs,
- [00:01:41.278]including from plant agriculture,
- [00:01:43.247]as part of our Greenhouse Innovation Center
- [00:01:45.585]at Innovation Campus,
- [00:01:48.014]to look at their impact on gut health
- [00:01:50.951]and how the microorganisms in the gut are populated.
- [00:01:54.776]So, we're very excited about that.
- [00:01:56.476]We think that's an area
- [00:01:58.388]that we're gonna be leading in internationally
- [00:02:01.044]here at the University of Nebraska
- [00:02:03.116]in this new area of gut microbiology.
- [00:02:05.560]This week, you also shared
- [00:02:07.048]some research news on this front.
- [00:02:09.013]Let's talk about that.
- [00:02:10.289]Well, one of our scientists
- [00:02:12.307]in that Gut Function Initiative,
- [00:02:13.795]now the Nebraska Food for Health Center,
- [00:02:15.813]is Bob Hutkins, who's been
- [00:02:17.831]a long-time food scientist with us,
- [00:02:20.382]writes a column in the Lincoln paper about food.
- [00:02:24.260]Dr. Hutkins and his colleagues
- [00:02:26.013]in the Gut Function Initiative
- [00:02:27.342]published a paper here recently
- [00:02:29.466]in the area of probiotics,
- [00:02:31.166]that's an area that Bob has worked extensively in.
- [00:02:35.629]His colleague Jens Walter, who used to be
- [00:02:38.155]on our faculty, he's now in Canada,
- [00:02:40.991]where they were looking at where certain microorganisms,
- [00:02:45.182]certain bacteria in the gut,
- [00:02:47.266]seem to persist longer
- [00:02:50.114]in a favorable way,
- [00:02:51.850]through probiotics, through the introduction,
- [00:02:55.038]through probiotic use.
- [00:02:57.003]So, the probiotics to you and me on the street,
- [00:03:00.881]we kinda think of them as Jamie Curtis on TV
- [00:03:03.272]talking about helping improve digestion
- [00:03:07.469]and wellness and health.
- [00:03:08.850]That's what probiotics are,
- [00:03:10.604]where you're introducing favorable bacteria,
- [00:03:15.544]often in the form of yogurt, for example,
- [00:03:18.944]is a medium where that's been done.
- [00:03:20.803]So this new discovery where they've found
- [00:03:23.354]that in different from what we thought before
- [00:03:27.551]where bacteria don't last long in the gut
- [00:03:30.411]that that's very different than what we had anticipated.
- [00:03:33.744]They published that this past week,
- [00:03:35.034]and I'm pretty excited about that.
- [00:03:36.627]Very exciting, and I know the food for health,
- [00:03:38.889]that's really one of the big missions
- [00:03:41.071]of the university, isn't it?
- [00:03:42.183]It is, and we hear a lot now today coming out
- [00:03:47.070]of a lot of the technology that's being developed
- [00:03:50.098]has been developed out of the human genome effort
- [00:03:54.186]where we're moving more and more
- [00:03:56.523]toward personalized medicine,
- [00:03:58.967]where if we know more about our own genetic makeup,
- [00:04:03.271]our own genome, our own DNA makeup,
- [00:04:06.671]and things that we are more susceptible to
- [00:04:10.283]or more favorably inclined towards,
- [00:04:13.683]where personalized medicine is the long-term goal.
- [00:04:17.508]Food for health, if you think about that term itself,
- [00:04:20.377]that's the same kind of idea where
- [00:04:23.512]through understanding not only our genetic makeup,
- [00:04:27.337]in the long term, but also the gut,
- [00:04:29.781]the genetic makeup of the gut
- [00:04:31.374]and the microorganisms that colonize
- [00:04:34.538]our digestive systems.
- [00:04:35.783]We have an opportunity to improve health
- [00:04:38.318]through that kind of targeted way.
- [00:04:40.497]So really cutting-edge kind of work.
- [00:04:43.683]Nationally, there's a Microbiome Initiative
- [00:04:46.818]at the federal government level
- [00:04:48.997]that deals with human health,
- [00:04:50.537]deals with animal health as well,
- [00:04:52.822]plant health, the phytobiome they call it.
- [00:04:56.712]This is an area that we're very well-positioned in
- [00:04:59.674]here at the university to lead internationally.
