- [00:00:05.541]More than 20 years ago, on a snowy day
- [00:00:07.610]in February, representatives from seven food companies
- [00:00:10.730]came to the University of Nebraska-Lincoln
- [00:00:13.206]to talk about food allergy research.
- [00:00:16.070]What resulted was the
- [00:00:17.332]Food Allergy Research and Resource Program,
- [00:00:20.343]based on the work of UNL scientist, Steve Taylor.
- [00:00:24.068]Within five months all of 'em had joined us
- [00:00:27.648]charter members of the consortium.
- [00:00:30.664]Now we have, I think, 90 member companies, so it's
- [00:00:35.499]go to way beyond what I thought might be the case.
- [00:00:39.196]In the mid 1990s,
- [00:00:40.738]food allergy research wasn't well-funded.
- [00:00:43.586]Dr. Taylor used the consortium
- [00:00:45.338]to provide seed money for research.
- [00:00:48.075]The companies put in money annually,
- [00:00:50.887]it funds the research that we do for
- [00:00:57.064]the benefit of the industry and allergy consumers.
- [00:01:01.204]As a result, Dr. Taylor was able to develop
- [00:01:03.704]tools that detect food allergens like peanuts or gluten.
- [00:01:08.217]Those tools have been commercialized
- [00:01:10.432]and are used to make food safer.
- [00:01:13.111]Allergy consumers rely on
- [00:01:14.845]the ingredient statement on the product.
- [00:01:18.061]Does it have my allergen in it?
- [00:01:19.965]If it doesn't, they have to believe it's safe to eat.
- [00:01:24.848]And, these methods allow companies to assure them
- [00:01:29.389]that there's no residues of something else in their product.
- [00:01:35.702]Dr. Taylor and his colleagues continued
- [00:01:37.817]to develop new testing methods and improve current tools.
- [00:01:41.657]Research translated to industry helps protect consumers.
- [00:01:45.926]Food's so much safer for them
- [00:01:47.837]to eat now than it was before.
- [00:01:51.188]They still have restricted diets,
- [00:01:54.078]they probably always will have,
- [00:01:55.795]but companies are so much more vigilant about all of this.
