- [00:00:09.739][Narrator]: Getting a child to eat vegetables
- [00:00:12.559]may seem like a tall order, but not if you
- [00:00:15.679]know what to say.
- [00:00:16.799][Teacher]: Oh, and look at these vegetables,
- [00:00:19.039]look at how colorful they are.
- [00:00:20.899][Narrator]: Simple changes in the way
- [00:00:23.019]parents and caregivers talk to kids at the
- [00:00:25.319]table can make a difference. What doesn't
- [00:00:27.479]work? Pressure and restriction.
- [00:00:29.899][Dr. Dev]: So research has shown that
- [00:00:32.639]when you use restrictive feeding practices
- [00:00:36.339]it is a risk factor for childhood obesity.
- [00:00:39.479]Also, pressuring children to eat leads to
- [00:00:42.959]a dislike of that particular food that
- [00:00:46.738]persists in adolescents as well as in
- [00:00:49.779]adulthood.

- [00:00:52.599]develop healthy eating habits by sharing
- [00:00:55.259]research and information with parents and
- [00:00:57.879]childcare providers.
- [00:00:59.579][Dr. Dev]: Childhood obesity is a national
- [00:01:01.559]health concern both in terms of prevalence
- [00:01:04.379]and severity, and preschool age is very
- [00:01:07.659]important formative developmental year
- [00:01:10.979]where children are learning about their
- [00:01:13.279]likes and dislikes.

- [00:01:16.359]your vegetable?
- [00:01:17.339][Child]: Carrot.
- [00:01:18.318][Dr. Dev]: So helping providers focus on
- [00:01:20.219]healthful feeding, like role modeling
- [00:01:22.879]healthy eating, sitting with children,
- [00:01:25.099]eating meals together with children.
- [00:01:27.299][Narrator]: Dr. Dev develops videos and
- [00:01:29.039]workbooks to make mealtime nutritious and
- [00:01:32.399]easy.
- [00:01:33.319][Dr. Dev]: Then, you focus on the motivators.
- [00:01:35.299]When you are talking to the parents...
- [00:01:37.798][Narrator]: Programming includes strategies
- [00:01:40.018]to encourage healthy eating and information
- [00:01:42.639]about issues such as how to deal with a
- [00:01:45.239]child who is irritable or crying.
- [00:01:47.059][Dr. Dev]: Children can have their own
- [00:01:49.658]stress, they might be tired, they might
- [00:01:51.539]be feeling sick, so how do you handle
- [00:01:53.879]such situations without giving food as
- [00:01:57.899]reward, without practicing those unhealthy
- [00:02:00.498]feeding practices?
- [00:02:03.019][Narrator]: Graduate students who work with
- [00:02:04.959]Dr. Dev are encouraged to be part of her
- [00:02:07.038]research and develop their own ideas.
- [00:02:09.279]At a research poster fair, students shared
- [00:02:12.639]individual research projects.
- [00:02:14.599][Dr. Dev]: Think of yourself as a
- [00:02:16.679]collaborator, not just a student. Make the
- [00:02:19.499]project your own, be excited about it.
- [00:02:22.419]Do some research about it that, you know,
- [00:02:25.078]how you can make it more creative, make
- [00:02:27.898]it more innovative, and feel that, you know,
- [00:02:30.659]you have a sense of belonging in it.
- [00:02:33.839][Carmun Kok]: She's really knowledgeable
- [00:02:35.819]in her field, in what she does, and then
- [00:02:38.199]I got different experiences just with, you know,
- [00:02:41.239]like the poster and then we're working on
- [00:02:43.219]manuscript to publish, and I'm really
- [00:02:45.578]interested in extension work, and she does
- [00:02:48.438]some of that too.
- [00:02:50.139][Narrator]: In the future, Dr. Dev
- [00:02:51.758]would like to see her nutritional programming
- [00:02:53.998]pilot tested and distributed nationally.
- [00:02:56.599][Dr. Dev]: I am extremely passionate
- [00:02:58.639]about what I'm doing because most importantly
- [00:03:01.939]I think my research is really applied.
- [00:03:05.359]I also derive great purpose and passion
- [00:03:10.019]when I'm talking with parents and childcare
- [00:03:12.998]providers about this.
