Animal Scientist Chris Calkins led University of Nebraska-Lincoln research on beef muscle profiling. The result: a discovery of delicious and undervalued cuts of meat that add over a billion dollars in value for beef producers.

[00:00:32.063]for consumers.
[00:00:35.006]I love teaching students, seeing their
[00:00:37.047]understanding, recognition and challenging them
[00:00:40.072]to get the best out of themselves.
[00:00:43.039]Working in the meat laboratory allowed me to
[00:00:46.007]find a place where I could contribute and I could
[00:00:49.008]put the knowledge I was learning to work.
[00:00:52.005]It does make me proud to see products that
[00:00:55.072]we have helped develop appear in the marketplace.
