- [00:00:05.360]Meat Judging Contest Superintendent. I am very excited for this year's contest and I hope you
- [00:00:10.080]are as well. But to ensure that we have a very successful and confident contest, I'm going to
- [00:00:15.200]go over the Scantron with you to ensure that you know how to complete it. So I'm going to go ahead
- [00:00:19.360]and share my screen so that you are able to see the Scantron. Perfect. So on the far left, we have
- [00:00:32.820]a standard Scantron that you're going to receive the day of the contest and the one on the right
- [00:00:36.580]is one that I have briefly filled out so you know what it looks like. If you are an FFA meat judger,
- [00:00:43.640]we are very fortunate that the majority of this top portion of the Scantron is going to be filled
- [00:00:48.720]out for you.
- [00:00:49.600]So your first name, last name, as well as your team number and code will be filled out prior to
- [00:00:55.080]you receiving it. If it is not, please let us know day of contest that we can ensure that you are
- [00:01:00.560]bubbled in correctly and have been assigned to the correct team. As mentioned on the Scantron,
- [00:01:08.080]it says this is for demonstration and practice only. You will receive an official Scantron the
- [00:01:13.200]day of the contest. So I went ahead on the right side. I bubbled in UNL meat just to show you what
- [00:01:18.820]it looks like.
- [00:01:19.300]It will look like filled in. So let's get into the nitty-gritty of the Scantron and how you
- [00:01:24.580]completed the day of the contest. If you look at the top right where it says placing classes,
- [00:01:29.160]it has six different columns. Now for the state FFA contest, you're going to be evaluating five
- [00:01:34.480]different classes. If you look at the Scantron on the right, I bubbled in 1, 2, 3, 4 for my first
- [00:01:41.980]class placing, and then 2, 3, 4, 1 for my second class placing. What I want to point out is that
- [00:01:48.800]you only need to bubble in one bubble for each of these columns. So before you turn it in the
- [00:01:55.280]day of the contest, ensure that classes one through five have one single bubble in each
- [00:02:00.080]of these columns. Directly beneath that, you'll see you have questions for placing classes. This
- [00:02:05.480]will be a single rotation the day of the contest, and you'll have questions about the classes that
- [00:02:10.460]you evaluated. You will bubble in those in this portion. Please note that only one bubble
- [00:02:18.300]per row is needed for this Scantron portion. Directly to the left, you'll have the written
- [00:02:26.020]exam bubble area. You'll have a 20-question written exam, one bubble per row for each of the
- [00:02:34.060]first 20 rows. Now, this next portion I want to draw attention to because this is where we tend
- [00:02:40.980]to have the most bubble errors. This beef carcass quality grading portion. If you notice, there are
- [00:02:47.800]six rows and you can bubble and evaluate up to six different beef carcasses. At the state level
- [00:02:55.820]for Nebraska, we only evaluate two beef carcasses for both quality grading as well as yield.
- [00:03:01.280]grading. So we're only going to focus on these first two rows. The biggest mistake that I see
- [00:03:08.580]when students bubble in the Scantron is that there's multiple bubbles in each of these rows.
- [00:03:13.240]Notice I only have one bubble per row for this portion of the Scantron. That's very, very
- [00:03:19.660]important. If there is more than one bubble, the Scantron will not read it and then the points
- [00:03:23.580]cannot be allocated to that student. Now the beef carcass yield grading portion, we're very
- [00:03:29.240]fortunate the Scantron does provide an example for you. So if we evaluate a beef carcass and
- [00:03:34.100]determine that the yield grade is a 3.7, the three would be bubbled in its first
- [00:03:39.200]portion and then seven in the second portion. I provided two examples of a yield grade 2.6
- [00:03:46.320]and a yield grade 3.2. One thing that I would add to that is if you have
- [00:03:51.420]calculated a yield grade to be a 2.0, for example, where the tenths of a grade is a zero,
- [00:03:59.200]you have to bubble in the zero and not just the whole grade number. Very, very important.
- [00:04:03.640]This is the only portion of the Scantron where more than one bubble is acceptable per row. Very,
- [00:04:12.600]very important to note that. And then the last section on this front side is this bottom portion
- [00:04:17.620]where it says questions. It does say questions. However, this is used for the lab practicum
- [00:04:21.780]rotation of your contest. You'll have 10 questions in the lab practicum, only one bubble per column.
- [00:04:29.160]Here. Now the back side of your Scantron is going to be for retail ID and retail ID only.
- [00:04:35.940]This is what the blank Scantron looks like on the left. And I went ahead and bubbled into
- [00:04:41.140]from last year's contest so that you can see what it looked like. This first column is for
- [00:04:46.520]the species identification. Whether you note it as beef, pork, or lamb, you will bubble it as such.
- [00:04:51.740]The next column is going to be for primal identification. It ranges from A, the letter N,
- [00:04:59.120]and those can be found here on this portion of your Scantron. And then what I really want to
- [00:05:08.180]note is once we start getting into the retail cut digits, it does separate it from the first and
- [00:05:14.680]second. So for this first example, it was 69 as your identification code, which would be the
- [00:05:21.420]country style ribs. You do have to bubble in six and nine separately. Very important to note.
- [00:05:29.080]And then this last column is cookery. This is not something we have to worry about at the state
- [00:05:32.260]level. However, if you do go on to compete at the national level, you will likely have to identify
- [00:05:37.960]the cookery method for those primal cuts. Okay, that is all I had for you in terms of Scantron.
