- [00:00:24.960]Today is Monday after or Monday night
- [00:00:27.600]and raining outside and cold and before Thanksgiving.

- [00:00:37.500]So I'm gonna briefly explain myself and my background
- [00:00:42.060]and then maybe Linda can join
- [00:00:43.950]and she can explain her background.
- [00:00:46.320]And then after that we are getting to brief description
- [00:00:51.390]of the program, and I'd like to get to know each other.
- [00:00:54.840]So maybe you can briefly explain your name
- [00:00:59.498]and why you are interested maybe
- [00:01:02.850]at this point in this program.

- [00:01:09.330]And we don't have a specific activities yet at this point,
- [00:01:15.000]but let me talk about myself really quickly.
- [00:01:19.260]I'm originally from Japan
- [00:01:21.150]and I've been here in Nebraska for a long time.
- [00:01:24.960]When the Nebraska football team
- [00:01:26.400]was really great back in the nineties,
- [00:01:29.490]they took a national championship back to back '94, '95,
- [00:01:33.840]that's when I started my undergraduate.
- [00:01:36.690]I went to UNO actually,
- [00:01:39.360]and I studied my exercise science program
- [00:01:41.970]and then a Master's program and then here, came here,
- [00:01:45.870]UNL, I don't remember when, '98 or something like that.
- [00:01:51.810]And then started the PhD program.
- [00:01:54.690]And there was a position opened back in the 2010
- [00:02:00.570]at the Nutrition and Health Sciences Department.
- [00:02:03.540]And I took a position and then I started
- [00:02:09.570]faculty led Japan program back in 2018,
- [00:02:14.340]that was the first time we did.
- [00:02:17.370]Because of my background, I know the people in Japan
- [00:02:22.440]and I know there's some connections.
- [00:02:24.720]So we build a program around departments,
- [00:02:28.740]my department in Nutrition and Health Sciences.
- [00:02:31.560]So the allowing that the department's mission,
- [00:02:35.520]I created that a faculty led program.
- [00:02:38.160]So when you look at the title of the program,
- [00:02:42.120]Nutrition, Exercise, Food and Culture,
- [00:02:44.340]that covers that pretty much everything
- [00:02:46.830]about you wanna know in Japan.
- [00:02:49.500]So those are the things we're gonna experience
- [00:02:52.830]when you get there.
- [00:02:54.330]Last two times we did, 2018,
- [00:02:58.680]and this year, 2023, we stayed in Tokyo
- [00:03:03.180]for whole time, two weeks.
- [00:03:05.280]So our program starts right
- [00:03:07.590]after spring semester's done,
- [00:03:11.700]this year we left a little bit later, May 30th,
- [00:03:16.200]and then we came back June 13th, okay,
- [00:03:21.810]came back here 13th.
- [00:03:23.130]So we spent two weeks in Tokyo.
- [00:03:26.310]Now we did a lot of activities
- [00:03:30.150]and facility visits and university visit
- [00:03:33.420]and school visit, lot of things,
- [00:03:37.170]we don't know for sure yet at this point,
- [00:03:39.570]we might have too many activities,
- [00:03:41.970]so we might have to cut down, but this year
- [00:03:45.360]or this coming year, we will have a opportunity
- [00:03:48.480]to go to Osaka area.
- [00:03:50.730]Are you familiar with the Osaka?
- [00:03:52.590]Which is a western part of Japan.
- [00:03:55.170]So we have a partnership with Kobe University
- [00:04:00.270]and they graciously providing us accommodation for us.
- [00:04:04.920]So as of right now, we are leaving May 20th,
- [00:04:10.110]and then from here, you can leave
- [00:04:13.650]from anywhere in a United States.
- [00:04:16.080]So if you're going back home,
- [00:04:17.460]let's say you're living your home state
- [00:04:20.070]is let's say, Colorado, then you can leave
- [00:04:24.150]from the Colorado to actually,
- [00:04:26.340]there's a direct flight from Denver to Tokyo,
- [00:04:30.653]or Osaka I'm not sure.
- [00:04:32.910]But you can have a direct flight,
- [00:04:36.060]but at this time we gonna start from the US
- [00:04:40.140]and fly into Osaka, which is a western part of Japan.
- [00:04:44.430]And then we're gonna stay with the Kobe University,
- [00:04:47.790]you know, the Kobe beef phase,
- [00:04:50.250]that's part of our theme too, right?
- [00:04:53.370]Beef, we can experience probably the farmland,
- [00:04:57.270]they have cows and we might be able
- [00:04:59.970]to experience the Kobe beef,
- [00:05:02.940]which is really expensive, right?
- [00:05:05.190]And all of the activities we're gonna do
- [00:05:07.590]with the University of Kobe
- [00:05:09.210]and our students are presenting about Nebraska,
- [00:05:14.490]not necessarily really technical presentation,
- [00:05:19.050]but maybe you can talk about the college life
- [00:05:22.321]from here in UNL or maybe a weather,
- [00:05:26.070]maybe agriculture products we have,
- [00:05:29.820]and there are a lot of corporation coming
- [00:05:31.830]to Nebraska from Japan.
- [00:05:33.930]And if you know this or not,
- [00:05:35.640]there's a Nebraska Center in Tokyo,
- [00:05:39.683]and we will have a person coming in to talk about
- [00:05:43.320]the business partnership between Japan and Nebraska.
- [00:05:47.550]One of the things, mayonnaise, KEWPIE is a company,
- [00:05:52.170]they come here to buy eggs,
- [00:05:56.190]'cause a yolk, in order to make a mayonnaise,
- [00:05:58.830]you need to buy eggs.
- [00:06:00.360]So they have a partnership as well that way too.
- [00:06:03.600]And Nebraska is a great export on beef,
- [00:06:08.820]pork and corn obviously.
- [00:06:13.050]So those are the really good opportunity for us
- [00:06:15.210]to learn about not just the culture of food,
- [00:06:18.540]exercise and nutrition,
- [00:06:21.180]but also the business partnerships as well.
- [00:06:23.550]So those are opportunities we have.
- [00:06:25.620]So we will fly into Osaka,
- [00:06:28.680]and then we're gonna take a bullet train.
- [00:06:32.220]Have you heard that, bullet train?
- [00:06:35.550]Shinkansen, yes, you're right.
- [00:06:38.250]Do you know how fast it can run?
- [00:06:42.750]190 miles per hour.
- [00:06:45.330]So you will experience that from Osaka to Tokyo
- [00:06:49.170]in a couple of hours, which is you know,
- [00:06:51.360]western part of Japan to eastern part of Japan.
- [00:06:54.770]So you'll experience that and that's a cool experience
- [00:06:57.297]and we haven't done that before.
- [00:06:59.040]So this year, this coming year,
- [00:07:01.590]it's gonna be a great opportunity
- [00:07:03.000]for you to experience that.
- [00:07:05.130]And then we will spend another week in Tokyo
- [00:07:07.950]and then fly out from Tokyo.
- [00:07:10.380]That's the plan at this point.
- [00:07:12.360]we don't have any specific details yet,
- [00:07:15.270]but our program's really focused
- [00:07:17.400]on people interactions with the locals.
- [00:07:22.020]Yes, we will visit the some sightseeing places,
- [00:07:26.100]but our program is built on the people interactions,
- [00:07:30.570]including a middle school students,
- [00:07:32.160]including high school student, including a college students,
- [00:07:35.010]including a garden, community garden people,
- [00:07:37.830]people organize that, you know, gardening type of things.
- [00:07:41.250]And all of those people, those are the ones
- [00:07:44.790]that we are gonna really focus on.
- [00:07:46.890]And along the way you will experience
- [00:07:48.720]so many different kinds of food,
- [00:07:50.224]different kinds of people, different kinds of a culture.
- [00:07:54.540]And since we are going to Osaka, have you heard Kyoto?
- [00:07:59.880]Which is the ancient capital of Japan.
- [00:08:03.690]Since we are only one hour away, we will try
- [00:08:06.900]to create maybe a one day of excursion
- [00:08:10.620]from Osaka to Kyoto.
- [00:08:12.780]Maybe that would be cool, that's my plan too, but we'll see.
- [00:08:16.710]So all of those activities we would like to do,
- [00:08:19.920]but since only two weeks, we can do so much
- [00:08:23.910]and we will try to create balance between,
- [00:08:27.960]you want some free time
- [00:08:29.730]and from our experience in the past,
- [00:08:32.160]you want some experience and maybe a free time
- [00:08:34.500]to do visit, I don't know, Osaka,
- [00:08:38.443]actually there's a Universal Studio in Osaka area.
- [00:08:44.280]I don't know if you wanna go there or not,
- [00:08:46.492]but, so that's something you can do.
- [00:08:47.700]And Disney Land in Tokyo area as well,
- [00:08:51.030]so all of these different activities,
- [00:08:53.130]if you're interested in animation, Japanese animation,
- [00:08:56.700]they're are mecca for that in Tokyo as well.
- [00:08:59.100]So all of those, we haven't decided yet what we're gonna do.
- [00:09:03.083]But that's the plan at this point.
- [00:09:06.690]So you got the really long, that's myself.
- [00:09:11.370]So, we have a core leader.
- [00:09:15.360]When we take a students, we are looking at probably 15,
- [00:09:19.617]20, up to 20 students.
- [00:09:21.990]But we need additional faculty to go along.
- [00:09:26.100]So Linda has done last two times with me as well.
- [00:09:30.120]So she's experienced, and she cannot do things
- [00:09:36.270]that I cannot do.

- [00:09:42.150]or maybe, you know, the one floor, first time we did
- [00:09:45.690]one floor was for only females at the hotel type of things.
- [00:09:50.100]Last time we did, we didn't have that luxury,
- [00:09:52.830]but we'll see, we'll see.

- [00:10:33.660]between the Tokyo people and Osaka people.

- [00:10:42.720]to really experience two different parts of Japan.
- [00:10:45.630]So as Dr. Takahashi said, my name is Linda Young,
- [00:10:49.590]and I'm a faculty member
- [00:10:51.090]in the Department of Nutrition and Health Sciences.
- [00:10:53.400]So I've been at UNL for 45 years, so a long time.
- [00:10:57.510]And I've always been involved in dietetics education,
- [00:11:00.930]that's primarily where my focus has been.
- [00:11:03.330]But I see Nathan and Zef,
- [00:11:05.010]two of my students sitting over there.
- [00:11:06.330]So (laughs) good to see you guys,
- [00:11:08.790]I'm excited that you guys are thinking about coming.
- [00:11:11.430]So as Dr. Takahashi said, I have been on the trip
- [00:11:15.450]both in 2018 and 2020.
- [00:11:18.147]And so 2023, yes, we're supposed to go in 2020, yes,
- [00:11:23.383]2018 and 2023.
- [00:11:24.660]So this is a slide, I put some slides together
- [00:11:27.090]for my Nutrition 150 class this fall.
- [00:11:30.330]And so these are just a list of some of the things
- [00:11:33.243]that we did in 2023.
- [00:11:36.690]And so we certainly will do some of these in Tokyo.
- [00:11:40.590]We probably, we're only gonna be there for one week.
- [00:11:43.530]So we visited two universities, an exercise science program
- [00:11:47.670]and a university that's focuses
- [00:11:49.980]on agriculture and nutrition.
- [00:11:52.140]We assisted in the planning
- [00:11:53.280]of a community garden rice field,
- [00:11:54.900]I'll show some pictures in just a second.
- [00:11:57.120]Visited a high school and middle school,
- [00:11:59.610]and you might be wondering how is that so exciting?
- [00:12:02.610]But it was, the students loved it.
- [00:12:04.530]It was, they were great experiences just interacting
- [00:12:06.930]with the high school students
- [00:12:08.130]and the middle school students.
- [00:12:09.990]We did a judo lesson and also did a Japanese cooking lesson.
- [00:12:14.910]Heard a public health presentation on what some
- [00:12:18.180]of the chronic health, public health issues are in Japan.
- [00:12:22.980]Went to a Japanese professional baseball game
- [00:12:24.990]on the day that we were in a downpour, downpour of rain.
- [00:12:28.860]It's in a dome, thank goodness.
- [00:12:31.320]Took a tour of the Tokyo Dome,
- [00:12:33.450]visited the Japanese Institute of Sports Medicine,
- [00:12:36.150]which is very similar to our Olympic training facilities
- [00:12:40.590]here in the United States, so it's their version
- [00:12:42.750]of Olympic training.
- [00:12:44.550]We went to a Tokyo Shrine Festival, a Zen meditation.
- [00:12:49.680]And these are just a few of the things that we did.
- [00:12:52.200]Lots of shopping.
- [00:12:53.280]Our group this last year was probably much more
- [00:12:56.820]into shopping than our first group was,
- [00:12:58.680]so they could not get enough shopping.
- [00:13:00.150]So they did a lot of shopping,
- [00:13:02.340]and did a lot of, they were a pretty brave group
- [00:13:06.690]that kind of explored on their own.
- [00:13:09.810]And so evenings are always pretty much always free.
- [00:13:13.380]And so even often, you know,
- [00:13:15.360]late afternoon it's gonna be free.
- [00:13:17.340]So just some really quick pictures.
- [00:13:19.122]This was from our Japanese cooking class
- [00:13:22.530]where we made sushi.
- [00:13:24.480]And so that was just a really interesting experience.
- [00:13:28.410]And then one of the things
- [00:13:29.790]that I think you'll find really interesting
- [00:13:31.470]about Japan is just the food culture in restaurants,
- [00:13:36.750]but also just the food culture in stores.
- [00:13:39.510]And they have vending machines everywhere.
- [00:13:42.810]They have just all kinds of packaged foods
- [00:13:47.280]that are just very, very unique.
- [00:13:49.110]In the grocery stores everything is wrapped individually.
- [00:13:52.350]So each apple is in its own little container
- [00:13:55.260]or it's wrapped, each tomato is in its own little container
- [00:13:58.620]and they have like more flavor of Kit-Kats
- [00:14:02.040]than you could ever dream of.
- [00:14:03.120]So if you're a big Kit-Kat fan, my grandkids loved it.
- [00:14:06.480]So they have lots of different flavors of Kit-Kats.
- [00:14:09.330]Here's some pictures from the Tokyo Dome.
- [00:14:11.220]And so we actually, students actually,
- [00:14:15.690]practiced pitching, was pitching right?
- [00:14:17.430]And not, how far in the dug out type of thing, right?
- [00:14:21.660]So, and then we went to a Zen meditation
- [00:14:26.100]and so that was a very interesting experience as well.
- [00:14:31.560]And so it's amazing how long you can actually sit still
- [00:14:36.000]and not fall asleep.
- [00:14:37.590]You think you're gonna fall asleep.
- [00:14:38.730]But it's very, yeah, very relaxing,
- [00:14:41.250]very, it's just part of their spiritual experience
- [00:14:47.100]and culture.
- [00:14:48.150]I didn't explain really well,
- [00:14:50.803]before we took the students to their Zen meditation,
- [00:14:53.545]it's related to religion,
- [00:14:55.650]and we had student that different religion
- [00:14:58.950]and she was a little bit concerned
- [00:15:02.385]when there was different, you know, religion
- [00:15:07.134]and we have different gods and so on.
- [00:15:07.967]So I will explain more
- [00:15:10.110]and during the departure meetings we will start
- [00:15:14.625]probably after spring break or so,
- [00:15:18.810]last time we met the five times or so
- [00:15:21.930]then get prepared for the departure.
- [00:15:24.630]So we'll have a health insurance type of a topic one day,
- [00:15:30.840]different times maybe we'll talk
- [00:15:32.580]about specific activities and so on.
- [00:15:35.430]So you will have that departure minutes,
- [00:15:38.310]if you cannot attend in person,
- [00:15:41.070]we do that at Zoom like we are doing today as well.
- [00:15:45.450]And then I will create that a quiz or quizzes,
- [00:15:49.260]and then you will take a quiz
- [00:15:50.280]and make sure that you get the hundred percent.
- [00:15:52.800]That means that when you look at the materials
- [00:15:56.610]and answer the questions,
- [00:15:58.140]and then you are ready to go type of things,
- [00:16:00.060]so you will have that opportunity to learn
- [00:16:02.167]before we take off.

- [00:16:16.470]And then we also did a judo martial arts lessons,
- [00:16:19.590]which I think was probably for a lot of the students,
- [00:16:21.570]their favorite experience.
- [00:16:23.460]And so you learn a lot about judo
- [00:16:25.140]and the philosophy behind it.
- [00:16:27.150]And actually the students actually,
- [00:16:30.090]really got pretty good at it.
- [00:16:31.080]They were able to, I'm not sure what the term is,
- [00:16:34.470]but anyway (laughs).

- [00:16:46.950]to the junior high school,
- [00:16:48.180]which I would say was probably the highlight
- [00:16:50.310]for most of the students.
- [00:16:52.530]They really treated us like we were movie stars.
- [00:16:55.320]They thought we were pretty special,
- [00:16:57.240]and so just did great.
- [00:17:00.360]We did a tea ceremony while we were there.
- [00:17:02.820]They did this dance performance,
- [00:17:05.100]which I can't pronounce that but, which was really amazing.
- [00:17:08.730]And so we also played a, kinda like a basketball,
- [00:17:13.890]throwing a bean bag into this hoop that was, what,
- [00:17:16.860]20 feet up in the air or something like that.
- [00:17:18.570]I couldn't even toss it that far.
- [00:17:20.190]So it was just a really great experience.
- [00:17:22.110]So you just learn a lot about the schools in Japan
- [00:17:26.040]and how they're different than in the United States.
- [00:17:28.800]We sat in on classes, I mean in the high school we sat in,
- [00:17:32.640]I and another student sat in on their,
- [00:17:35.670]the classes where they were learning English
- [00:17:38.160]and they had different kinds of games
- [00:17:40.440]that we were involved in in terms
- [00:17:41.670]of just learning the English language.
- [00:17:43.080]So, and the kids are great.
- [00:17:44.250]They're just very, very enthusiastic,
- [00:17:47.220]very anxious to see you
- [00:17:49.650]and really get to know more about you.
- [00:17:51.750]And then we visited lots of shrines,
- [00:17:53.760]and so these are just some pictures
- [00:17:56.190]of the shrines that we visited.
- [00:17:57.576]There actually was a wedding
- [00:17:59.450]in that very lower right hand corner.
- [00:18:02.040]There was a wedding that was occurring while we were there,
- [00:18:04.170]which was really interesting to see a Japanese,
- [00:18:06.420]a traditional Japanese wedding.
- [00:18:08.790]And that may, then the rice planting.
- [00:18:11.040]So basically we work with a community garden's a good way
- [00:18:16.560]to really explain it.
- [00:18:17.670]And then basically they harvest the rice
- [00:18:20.793]and give it away, right?
- [00:18:22.470]It's kind of like- They donate
- [00:18:24.450]to city people and so on (indistinct).
- [00:18:29.610]And they send us a picture of the last time we've been,
- [00:18:32.550]so I'm assuming they will do that now,
- [00:18:35.130]'cause it's about the harvest season now, so.
- [00:18:38.490]So basically, so you're basically are in this kind
- [00:18:40.770]of like muddy marsh, and then these are just
- [00:18:44.970]the one picture has kind of just the little,
- [00:18:47.580]the little rice plants and you just
- [00:18:48.747]are basically putting them into the mud
- [00:18:51.720]and you're hoping that you don't fall, so (laughs),
- [00:18:54.690]which Linda did the first time, I did the first time.
- [00:18:56.430]I didn't this last time though, but yeah, I was smart,
- [00:18:59.160]I wasn't in the middle of the rice field.
- [00:19:01.530]And then this is just a picture over there
- [00:19:04.250]in the lower right hand corner of us
- [00:19:05.640]just your feet get very, very muddy
- [00:19:07.350]and your hands get very muddy, so we're cleaning,
- [00:19:09.300]we're washing ourselves off.
- [00:19:10.740]But it's just a great experience.
- [00:19:12.000]And the people are, Japanese people are just,
- [00:19:13.560]they're just so wonderful and they
- [00:19:15.540]are so appreciative of the help
- [00:19:16.890]and they're so patient with us,
- [00:19:18.750]'cause sometimes we put too many plants in one spot
- [00:19:21.270]and we plant them too close together and,
- [00:19:23.250]but anyway, they're just really, really great.
- [00:19:25.260]So, and then just some Tokyo nightlife.
- [00:19:28.350]So obviously Tokyo is just a very, very large city
- [00:19:32.760]and so the downtown is very vibrant, very busy all day long,
- [00:19:38.430]but especially in the evening, and just lots of lights
- [00:19:42.210]and all that type of thing.
- [00:19:43.350]So it was just a really, a lot of fun things to do.
- [00:19:46.110]So, and that's just a picture of the group from 2023,
- [00:19:51.420]and that was actually taken in the Zen meditation facility.

- [00:19:57.270]So just kinda gives you an idea of the things that we did
- [00:19:59.577]and the places that we visited and-
- [00:20:02.706]And as you can see we have
- [00:20:04.774]a really diverse students, right?

- [00:20:52.140]little bit about transportation system
- [00:20:56.730]we're gonna use and maybe hotel maybe,
- [00:21:01.560]looks like when you get there, we are staying at the,
- [00:21:06.180]not the fancy hotel any means, right?
- [00:21:10.710]Let's just start with the hotel.
- [00:21:13.200]Sakura Hotel we stayed at in Tokyo.
- [00:21:15.810]I don't know the dorms this time when we go to Osaka.
- [00:21:19.350]So I can only talk about the hotel we stayed at in Tokyo.
- [00:21:24.150]So that was probably five, six story hotel.
- [00:21:28.230]It's a big size, good size,
- [00:21:30.810]but you don't have a own bathroom
- [00:21:36.120]inside of your room and you don't have
- [00:21:40.020]shower inside of your room.
