- [00:00:21.990]and we convert those into sugar.
- [00:00:24.270]We take that sugar and we ferment it with a yeast,
- [00:00:27.510]and turn it into citric acid,
- [00:00:28.928]and then we refine that citric acid for sale.
- [00:00:31.920]Our project for our senior design
- [00:00:33.900]is to produce citric acid from banana peels and corn.
- [00:00:37.380]Citric acid is a common food preservative.
- [00:00:39.630]It's found in many things like soda, and is also responsible
- [00:00:42.210]for what makes things like sour patch kids sour.
- [00:00:46.824]This project was about taking something
- [00:00:49.470]out on a laboratory scale,
- [00:00:50.850]that's only ever been done with a few banana peels,
- [00:00:53.010]and figuring out how to scale it up, and model it
- [00:00:55.650]to have a process that involves millions of banana peels.
- [00:00:59.850]This has never been done before,
- [00:01:01.890]so one of the most challenge thing is to find a source
- [00:01:08.640]for millions of banana peels,
- [00:01:10.590]and best way to refine most of them for protection.
- [00:01:15.960]And, at the end of the day,
- [00:01:16.890]what this project really comes down to,
- [00:01:18.540]is just finding a way to make something useful
- [00:01:20.910]out of a product like banana peels,
- [00:01:22.770]that just ends up in a waste field.
- [00:01:24.480]And so, instead of it just decomposing, and, kind of,
- [00:01:26.250]going towards nothing,
- [00:01:27.690]we wanna make it contribute to society
- [00:01:30.210]in a way that's just more sustainable,
- [00:01:32.220]and also helps promote the circular economy,
- [00:01:34.860]so that we're, just, you know,
- [00:01:35.693]all reducing, reusing, and recycling.
