The Nebraska Meat Science Technology and Innovation Center will provide an array of workforce development opportunities, technical assistance, and hands-on training to promote best-in-class practices across a wide range of important areas, including animal welfare, food safety, occupational safety and health, worker force training, and sustainability. Clint Krehbiel, head of UNL’s Animal Science Department, discussed the project live on RFD-TV, June 7, 2022.

- [00:00:12.420]Head of the animal science department, Clint Krehbiel joins us now with the latest on those efforts.
- [00:00:17.670]And thank you very much for your time this morning.
- [00:00:19.590]Clint, could you begin first of all by describing the project you guys have pulled together.
- [00:00:24.900]Good morning, Janet really appreciate the appreciate the opportunity.
- [00:00:29.010]So the Nebraska Meat Science Technology and Innovation Center is a multidisciplinary center that's really
- [00:00:34.950]aimed at supporting the livestock and meat producers in the state of Nebraska and region.
- [00:00:40.950]The center is a culmination of a lot of investments the university has made recently including the Food
- [00:00:46.290]Processing Center, Feedlot Innovation Center, the Nebraska Veterinary Diagnostics Center, and then
- [00:00:52.410]education platforms across the entire state of Nebraska, again, aimed at supporting a resilient,
- [00:00:59.940]robust, sustainable meat industry for this state.
- [00:01:03.480]The next phase in that process is to renovate our Loeffel Meat Laboratory, our current meat laboratory,
- [00:01:10.110]the last renovation of that facility was in the 1930s.
- [00:01:13.800]And it's really time to upgrade that space in order to give our students and other workforce the opportunity
- [00:01:21.090]to learn in a cutting edge modern, fully operational and functioning facility.
- [00:01:27.570]So what has been the response from me processors and also producers across the Husker state so far?
- [00:01:34.020]Overwhelmingly positive support, we've received notes and letters from producers, processors and other
- [00:01:41.250]industry stakeholders about the importance of this project.
- [00:01:45.750]For example, Bill, Luckey's a swine producer that actually worked at the Loeffel Meat Lab as an
- [00:01:50.820]undergraduate student, and during COVID saw the opportunity as he and many other swine producers were
- [00:01:57.780]facing, slaughtering hogs, market ready hogs, and so he contacted us and we opened our facility, and we're able
- [00:02:05.730]to move that product to local food banks.
- [00:02:08.670]One thing that that Bill noted was, certainly we have a willingness to help.
- [00:02:14.310]But the challenge is limited cooler space.
- [00:02:16.950]And so you can just begin to see the importance of renovations of our facilities in order to meet the
- [00:02:22.260]needs of our producers and processors in the state of Nebraska.
- [00:02:26.580]Why is the stakeholder support so important to get this off the ground and running.
- [00:02:32.280]So as a land grant institution, our mission of research teaching and outreach as the state's university, of
- [00:02:39.120]course, our first and foremost job is to listen to the needs of our stakeholders.
- [00:02:44.640]And so we want to be in a position to not only respond to needs of producers like we were able to do for Bill
- [00:02:51.570]Luckey during COVID.
- [00:02:53.580]But more importantly, think about young producers, entrepreneurs and how we can support them as they
- [00:03:00.120]develop businesses from direct marketing to consumer ready products.
