- [00:00:15.270]It may not look like raw food,

- [00:00:18.080]just like fresh tomatoes or carrots.
- [00:00:21.100]The wheat grains from which flour is ground
- [00:00:23.470]are grown in fields.
- [00:00:25.100]Like all foods grown outdoors,
- [00:00:26.760]it may be exposed to a variety
- [00:00:28.500]of harmful bacteria like E. coli and salmonella
- [00:00:31.860]from the soil, water, bird and other animals.
- [00:00:35.350]The wheat grains are harvested and transported
- [00:00:37.790]to be minimally processed and milled into flour.
- [00:00:40.890]Then it is packaged and sent to the store
- [00:00:43.400]or processed into other raw flour products
- [00:00:46.030]like cake mix and cookie dough.

- [00:00:49.810]are designed to kill bacteria.
- [00:00:51.760]That means if the wheat grains were contaminated

- [00:00:55.200]the bacteria could have survived,
- [00:00:57.000]and been present in the finished flour
- [00:00:58.960]or flower products.
- [00:01:00.710]So you can get sick if you eat unbaked dough
- [00:01:03.190]or batter made with flour containing bacteria
- [00:01:05.900]because they are killed only when food
- [00:01:08.170]made with flour is thoroughly baked or cooked.
- [00:01:11.400]Since 2009, there have been several outbreaks
- [00:01:14.350]of foodborne illness involving the consumption
- [00:01:16.710]of raw flour or raw flour products
- [00:01:18.900]in the United States of America.
- [00:01:21.210]For example, in 2021,
- [00:01:23.150]an outbreak of E. coli was linked
- [00:01:25.350]to eating or tasting raw cake mix batter.
- [00:01:28.700]This outbreak caused 16 illnesses,
- [00:01:30.990]and seven hospitalizations in 12 states.
- [00:01:34.380]Despite these unfortunate events,
- [00:01:36.200]according to research developed in 2019,
- [00:01:38.680]in which flower consumers were interviewed.
- [00:01:41.310]Most of them were unaware that raw flour products
- [00:01:44.370]may be a source of harmful bacteria.
- [00:01:47.070]More than half ate raw dough or batter,
- [00:01:49.500]and nearly 20% of the ones who lived
- [00:01:51.550]with children allowed them to play
- [00:01:53.270]with raw dough or batter.
- [00:01:55.160]For your safety,
- [00:01:56.100]it is essential to avoid
- [00:01:57.570]these inappropriate practices,
- [00:01:59.300]and implement the following food safety tips
