- [00:00:34.840]Worldwide, more than 1 billion cases of foodborne diseases
- [00:00:38.650]occur every year, with more than 5 million children dying
- [00:00:42.390]from foodborne illness.
- [00:00:43.930]Those are alarming numbers
- [00:00:45.470]and the food industry and regulators are constantly working
- [00:00:48.750]to bring those numbers down.
- [00:00:51.130]In the United States alone,
- [00:00:52.590]it is estimated that one in six people get sick each year
- [00:00:56.370]from contaminated food with more than 250 pathogens
- [00:01:00.390]as the cause of foodborne illnesses.
- [00:01:03.180]About 3,000 deaths each year are estimated to be associated
- [00:01:06.340]with foodborne disease.
- [00:01:08.730]In addition to the illnesses,
- [00:01:10.070]other negative aspects are associated
- [00:01:12.130]with foodborne occurrences.
- [00:01:14.520]Foodborne illnesses also come with a hefty price tag,
- [00:01:17.720]including medical costs, a drop in productivity,
- [00:01:20.800]and loss of wages.
- [00:01:22.940]Additionally, there are costs associated with recalls
- [00:01:25.870]and product losses as contaminated products
- [00:01:28.380]need to be reprocessed or discarded.
- [00:01:31.330]These combined losses may result in product liability
- [00:01:34.760]and lawsuits, all leading to loss of businesses.
- [00:01:38.560]In the United States,
- [00:01:39.600]foodborne illness costs about $15.6 billion yearly.
- [00:01:44.740]From 1971 to 2018,
- [00:01:47.240]the Centers for Disease Control and Prevention
- [00:01:49.610]recorded nearly 22,000 foodborne illness outbreaks
- [00:01:53.440]in the US.
- [00:01:54.920]Those outbreaks led to more than 423,000 illnesses,
- [00:01:59.110]more than 18,000 hospitalizations, and 436 deaths.
- [00:02:04.470]Those recorded numbers are directly associated
- [00:02:07.030]with outbreaks where the illness was investigated,
- [00:02:09.600]the patients were tested, and the illness was tied back
- [00:02:12.740]to a single source.
- [00:02:14.260]But it's estimated the actual number is much higher.
- [00:02:18.010]The discrepancy comes from the simple fact
- [00:02:20.120]that many individuals who experience foodborne illness
- [00:02:23.260]recover without seeking medical assistance.
- [00:02:26.010]Those cases aren't included in the official statistics.
- [00:02:30.580]The products that are most commonly associated
- [00:02:33.150]with foodborne illnesses include fish, dairy, chicken, beef,
- [00:02:37.340]mollusks, pork, vegetables, and fruit.
- [00:02:40.740]Animal protein-based foods contribute to about 60%
- [00:02:44.330]of all occurrences.
- [00:02:46.570]When the microorganisms associated with outbreaks
- [00:02:49.120]are taken into account,
- [00:02:50.570]associations between certain microorganisms
- [00:02:53.310]and food products can certainly be made.
- [00:02:56.240]For example, land animals and their products
- [00:02:58.420]such as dairy, chicken, and beef cattle
- [00:03:00.370]are responsible for 44% of the outbreaks.
- [00:03:04.390]The illnesses are usually caused by Salmonella,
- [00:03:07.280]Campylobacter, and Listeria monocytogenes.
- [00:03:11.720]Less frequent outbreaks caused by aquatic animals
- [00:03:14.540]can be associated with certain toxins
- [00:03:16.720]such as scombroid fish toxin and ciguatoxin.
- [00:03:21.020]While outbreaks caused by plant-based foods
- [00:03:23.460]are mostly caused by Salmonella and Listeria monocytogenes.
- [00:03:27.767]As far as the source of the food,
- [00:03:29.670]outbreaks are caused by the consumption
- [00:03:31.530]of contaminated food and drinks, consumption of raw products
- [00:03:35.120]such as unpasteurized milk or dairy products,
- [00:03:38.180]or consumption of foods that were time temperature abused
- [00:03:41.450]where microbial growth becomes the issue.
- [00:03:44.560]Therefore, outbreaks are not only associated
- [00:03:46.770]with processed foods purchased at the supermarket.
- [00:03:49.710]It can also originate from a dining experience
- [00:03:52.080]at a restaurant or food truck,
- [00:03:53.710]or even be the result of home cooked meals
- [00:03:56.050]shared at a social event.
- [00:03:58.280]In summary, there are plenty of reasons
- [00:04:00.230]for food safety practices to be implemented
- [00:04:02.690]with the most important one being the care of the consumer.
- [00:04:06.840]It is the right thing to do
- [00:04:08.350]and definitely the most ethical approach
- [00:04:10.850]to food production and processing.
