- [00:00:05.740]As chancellor of Nebraska's flagship
- [00:00:07.513]comprehensive research land-grant university.
- [00:00:11.090]I want to thank each and every one of you for joining us
- [00:00:14.150]for the inaugural Agriculture and Health Summit,
- [00:00:17.200]cultivating gut health at the crossroads of food
- [00:00:20.040]and medicine.
- [00:00:21.370]It's sponsored by the Nebraska Food for Health Center
- [00:00:24.240]and coming to you from our central United States location
- [00:00:27.490]here in Lincoln, Nebraska.
- [00:00:29.740]Scientific discoveries related to the gut microbiome
- [00:00:33.080]and diet are attracting global attention,
- [00:00:36.640]but we realized early on here at the University of Nebraska,
- [00:00:40.720]that practical efforts to create gut focus foods
- [00:00:43.740]and medicines for better health,
- [00:00:45.900]often occur in silos, incorporating only a few areas
- [00:00:50.260]of expertise.
- [00:00:52.030]Accelerating new applications of gut microbiome science
- [00:00:55.610]requires input from the entire roster of people
- [00:00:58.980]who produce our foods and medicines,
- [00:01:01.420]including experts in nutrition and food science,
- [00:01:04.660]as well as those in plant and agricultural sciences
- [00:01:07.600]and medical biotechnology.
- [00:01:10.180]Another challenge we face is that in the US
- [00:01:13.500]there is no singular federal agency
- [00:01:15.630]that can promote collaborations across all the disciplines
- [00:01:18.970]necessary to achieve our goals in this area.
- [00:01:21.870]So I think this is a very powerful story.
- [00:01:24.100]Jeff Raikes, a former Executive Officer
- [00:01:26.560]at the Gates Foundation
- [00:01:28.160]recognize this issue and became one of the major donors
- [00:01:31.610]for startup funding for the Nebraska Food for Health Center.
- [00:01:35.480]This inaugural conference is an important component
- [00:01:39.100]of the center's work in addressing
- [00:01:40.870]these and other challenges.
- [00:01:43.760]I'm excited that you were connecting with us
- [00:01:46.140]to examine the opportunities and challenges
- [00:01:48.680]in mitigating disease risk via the gut microbiome,
- [00:01:52.570]and to strategize about working towards solutions
- [00:01:55.400]in nutrition and medicine.
- [00:01:57.740]We hope that this conference becomes fertile territory
- [00:02:00.580]for an ongoing series of such events
- [00:02:03.130]that brings together these important
- [00:02:05.000]but very diverse academic disciplines,
- [00:02:07.640]and elements of the private sectors and regulatory agencies.

- [00:02:36.430]through the gut microbiome, a reality.
- [00:02:39.870]In other words, creating novel products
- [00:02:42.480]that target the gut microbiota
- [00:02:44.600]with the aim of preventing and treating chronic diseases.
- [00:02:48.780]We are pleased that the center
- [00:02:50.100]not only collaborates locally,
- [00:02:52.010]but has ties to other major food for health centers
- [00:02:54.570]across the US and globally,
- [00:02:57.220]including the Food for Health Institute
- [00:02:59.050]at the University of California Davis,
- [00:03:01.620]the Whistler Center for Carbohydrate Research
- [00:03:04.200]at Purdue University, and ABC Microbiome
- [00:03:07.860]in Cork, Ireland.
- [00:03:09.530]On the conference agenda,
- [00:03:10.730]are leaders from each of these partnering entities,
- [00:03:13.460]beginning in the first session where you will hear
- [00:03:15.850]from directors of major food for health centers
- [00:03:18.400]and gut microbiome research projects,
- [00:03:21.360]including Bruce German, Director of the UC Davis
- [00:03:24.410]Food for Health Institute,
- [00:03:26.180]Yolanda Sanz, Coordinator of the MyNewGut
- [00:03:28.980]Research Consortium and Bruce Hamaker
- [00:03:31.900]Director of the Whistler Center for Carbohydrate Research.
