- [00:00:16.150]in the preparation, handling
- [00:00:17.710]and storage of food meant to protect the safety of consumers
- [00:00:21.590]by preventing foodborne illness and injury.
- [00:00:24.750]That includes preventing the contamination of foods
- [00:00:27.480]with any biological, chemical or physical hazard.
- [00:00:31.820]The need for the application of food safety practices
- [00:00:34.400]becomes evident when the number of foodborne illness
- [00:00:37.050]on a yearly basis is considered.
- [00:00:40.090]Worldwide, more than 1 billion cases of foodborne diseases
- [00:00:43.900]occur every year, with more than 5 million children dying
- [00:00:47.620]from foodborne illness.
- [00:00:49.170]Those are alarming numbers and the food industry
- [00:00:51.730]and regulators are constantly working
- [00:00:53.970]to bring those numbers down.
- [00:00:56.350]In the United States alone,
- [00:00:57.810]it is estimated that one in six people get sick each year
- [00:01:01.600]from contaminated food, with more than 250 pathogens
- [00:01:05.620]as the cause of foodborne illnesses.
- [00:01:08.410]About 3000 Deaths each year
- [00:01:09.940]are estimated to be associated with foodborne disease.
- [00:01:13.970]In addition to the illnesses,
- [00:01:15.330]other negative aspects are associated
- [00:01:17.360]with foodborne occurrences.
- [00:01:19.650]Foodborne illnesses also come with a hefty price tag,
- [00:01:22.960]including medical costs,
- [00:01:24.580]a drop in productivity and loss of wages.
- [00:01:28.180]Additionally, there are costs associated with recalls
- [00:01:31.100]and product losses as contaminated products
- [00:01:33.620]need to be reprocessed or discarded.
- [00:01:36.570]These combined losses may result in product liability
- [00:01:39.990]and lawsuits, all leading to loss of businesses.
- [00:01:43.800]In the United States, foodborne illness
- [00:01:45.670]costs about $15.6 billion yearly.
- [00:01:49.970]From 1971 to 2018,
- [00:01:52.480]the Centers for Disease Control and Prevention
- [00:01:54.840]recorded nearly 22,000 foodborne illness outbreaks
- [00:01:58.690]in the US.
- [00:02:00.130]Those outbreaks led to more than 423,000 illnesses,
- [00:02:04.350]more than 18,000 hospitalizations and 436 deaths.
- [00:02:09.710]Those recorded numbers are directly associated
- [00:02:12.260]with outbreaks where the illness was investigated,
- [00:02:14.830]the patients were tested
- [00:02:16.470]and the illness was tied back to a single source.
- [00:02:19.500]But it's estimated the actual number is much higher.
- [00:02:23.240]The discrepancy comes from the simple fact
- [00:02:25.380]that many individuals who experienced foodborne illness
- [00:02:28.490]recover without seeking medical assistance.
- [00:02:31.240]Those cases aren't included in the official statistics.
- [00:02:35.800]The products that are most commonly associated
- [00:02:38.380]with foodborne illnesses include fish, dairy, chicken, beef,
- [00:02:42.600]mollusks, pork, vegetables and fruit.
- [00:02:45.970]Animal protein-based foods contribute
- [00:02:48.110]to about 60% of all occurrences.
- [00:02:51.800]When the microorganisms associated with outbreaks
- [00:02:54.340]are taken into account,
- [00:02:55.780]associations between certain microorganisms
- [00:02:58.540]and food products can certainly be made.
- [00:03:01.490]For example, land animals and their products
- [00:03:03.660]such as dairy, chicken and beef cattle are responsible
- [00:03:06.380]for 44% of the outbreaks.
- [00:03:09.650]The illnesses are usually caused by Salmonella,
- [00:03:12.510]Campylobacter and Listeria monocytogenes.
- [00:03:16.950]Less frequent outbreaks caused by aquatic animals
- [00:03:19.770]can be associated with certain toxins,
- [00:03:21.950]such as scombroid fish toxin and ciguatoxin.
- [00:03:26.260]While outbreaks caused by plant-based foods
- [00:03:28.690]are mostly caused by Salmonella and Listeria monocytogenes.
- [00:03:32.997]As far as the source of the food,
- [00:03:34.900]outbreaks are caused by the consumption
- [00:03:36.760]of contaminated food and drinks,
- [00:03:38.760]consumption of raw products such as unpasteurized milk
- [00:03:41.950]or dairy products or consumption of foods
- [00:03:44.790]that were time temperature abused
- [00:03:46.680]where microbial growth becomes the issue.
- [00:03:49.800]Therefore outbreaks are not only associated
- [00:03:52.000]with processed foods purchased at the supermarket.
- [00:03:54.950]It can also originate from a dining experience
- [00:03:57.290]at a restaurant or food truck,
- [00:03:58.950]or even be the result of home-cooked meals
- [00:04:01.280]shared at a social event.
- [00:04:03.520]In summary, there are plenty of reasons
- [00:04:05.470]for food safety practices to be implemented,
- [00:04:07.940]with the most important one being the care of the consumer.
- [00:04:12.070]It is the right thing to do
- [00:04:13.580]and definitely the most ethical approach
- [00:04:16.070]to food production and processing.
