- [00:00:06.750]and I am the Meats Judging coach
- [00:00:08.470]here at University of Nebraska.
- [00:00:11.120]Meats Judging has been a big part
- [00:00:13.220]of the UNL Animal Science program since the 1920s.
- [00:00:17.490]Meats Judging provides an awesome opportunity
- [00:00:20.010]for students to be able to put
- [00:00:21.830]what they've been learning in class into practice.
- [00:00:25.850]At contest, students are able to evaluate carcasses and cuts
- [00:00:30.440]from pork, beef, and lamb to determine quality and yield.
- [00:00:34.840]So really determining and trying to evaluate
- [00:00:37.300]how good that product is gonna taste
- [00:00:39.610]and how much of that product we're going to be able to get.
- [00:00:42.440]Really trying to determine the value
- [00:00:44.747]behind those cuts and those carcasses.
- [00:00:48.220]Through Meats Judging, students have the opportunity
- [00:00:50.730]to be introduced to the meat industry.
- [00:00:52.880]They have the chance to get into packing plants
- [00:00:55.220]and be able to see what types of jobs there are out there,
- [00:00:58.280]internships, really be able to get exposed to that industry.
- [00:01:02.770]They develop relationships
- [00:01:04.190]with their fellow students here from UNL.
- [00:01:06.960]They get to spend a lot of hours together
- [00:01:08.980]on long road trips, and time in the cooler,
- [00:01:12.470]really being able to bond with their teammates,
- [00:01:14.890]and to have those great relationships formed.
- [00:01:18.070]Outside of UNL, they have the opportunity to meet students
- [00:01:21.600]and network with students from other universities,
- [00:01:24.380]professors and faculty from other universities,
- [00:01:27.110]as well as industry professionals.
- [00:01:28.721]This provides great opportunities
- [00:01:30.820]to be able to see what's out there in the meat industry,
- [00:01:33.800]what ways they can get involved and plugged in,
- [00:01:36.980]as well as just really being able to grow their network
- [00:01:40.050]and find their passion for meat science.
- [00:01:43.740]I started here at the university in June
- [00:01:46.180]and have since taken over the coaching responsibility
- [00:01:49.100]alongside my assistant coach, Joe Sonderman
- [00:01:52.090]who is a graduate student in the Meats Department.
- [00:01:57.140]2020 has been an interesting year
- [00:01:59.410]for the UNL Meats Judging Team.
- [00:02:02.040]The team was able to travel in the spring
- [00:02:04.210]to a contest at Iowa State.
- [00:02:06.680]However, after that there was limitations with travel.
- [00:02:10.430]This fall the students had the opportunity
- [00:02:12.360]to participate in judging contest virtually.
- [00:02:15.620]So they were able to compete in three different contests.
- [00:02:18.900]And this was really a great way
- [00:02:20.310]for them to still be active Meats Judging
- [00:02:23.270]for us to be able to continue to practice
- [00:02:25.960]and use that material in the classroom
- [00:02:28.620]as well as to be able to retain their eligibility
- [00:02:31.180]for this spring.
- [00:02:32.450]The 2020 team consisted of Rogetter Rasmussen,
- [00:02:36.960]Harlee Braukmuller, Wilson Herman, and Bryar Gerlach.
- [00:02:41.350]All four our seniors,
- [00:02:43.080]and will be moving on from UNL this spring.
- [00:02:48.630]Harlee and Bryar will stay on the judging team this spring
- [00:02:53.140]for just the spring 2021 season.
- [00:02:55.540]They're able to retain their eligibility
- [00:02:57.870]and continue on with the new team.
- [00:03:00.100]The 2021 team consists of Laura Reiling, Izzy McGibbon,
- [00:03:04.570]Ben Smith and Haul Moony.
- [00:03:07.080]Harlee and Bryar have done a great job
- [00:03:09.090]serving as role models for this new team
- [00:03:11.240]and really helping them transition into the 2021 team
- [00:03:16.420]and getting them excited to be able to participate
- [00:03:19.300]in judging contests throughout the next year.

- [00:03:23.690]to work with the new team
- [00:03:25.150]as well as our existing 2020 team,
- [00:03:28.609]to be able to continue to grow and promote this program.

- [00:03:35.950]I'm from Wellfleet, Nebraska.
- [00:03:38.120]I'm a senior here at the University of Nebraska-Lincoln
- [00:03:41.620]majoring in animal science with the meat science option.
- [00:03:46.050]I chose to retain my eligibility for the Meats Judging team
- [00:03:50.990]because I wanted to be able to learn as much as I can
- [00:03:53.430]about meats, and Meats Judging,
- [00:03:55.910]and the meat industry as a whole.
- [00:03:58.560]It's a great way to really expand your knowledge.
- [00:04:02.830]And it's a great way to meet other people
- [00:04:06.380]and gain industry experience.

- [00:04:12.700]I'm from Greenwood, Nebraska,
- [00:04:14.130]and I'm a senior here at the University of Nebraska-Lincoln.

- [00:04:20.270]because I thought it was a great opportunity
- [00:04:22.010]to build connections with other students
- [00:04:24.110]from other universities with the same interest as me.
- [00:04:27.814]Hi, my name is Joe Sonderman.
- [00:04:29.124]I'm a graduate student
- [00:04:30.590]here at the University of Nebraska-Lincoln.
- [00:04:32.640]I was on the 2018 Meats Judging team as an undergrad.
- [00:04:35.860]And then last year I was the head coach of the 2020 team.
- [00:04:40.190]And this year I will be an assistant coach
- [00:04:41.663]for the 2021 team.
- [00:04:43.820]I think Meats Judging is a great opportunity
- [00:04:45.980]for undergrads to learn a little bit more
- [00:04:48.540]about the meat industry,
- [00:04:50.160]learn lots of really valuable skills
- [00:04:52.570]that will help them in their careers in the future
- [00:04:54.890]through the meat industry.
- [00:04:56.770]And so I think that it's a very worthwhile endeavor
- [00:05:00.600]to be on the Meats Judging team.
