- [00:00:24.050]Now, before we get started,
- [00:00:25.210]can you give us a little background, of course,
- [00:00:26.620]on the Food in the Field program?
- [00:00:29.550]Yes, so Food in the Field started back in 2018,
- [00:00:33.070]and I had the idea for the program
- [00:00:34.610]after experiencing my first run of harvest.
- [00:00:37.630]I'm actually not from an agricultural background,
- [00:00:39.820]but I married into one.
- [00:00:41.110]And to be honest, I was a little shocked
- [00:00:43.200]when I saw how my husband's eating patterns
- [00:00:45.490]changed during the season of harvest.
- [00:00:47.560]A lot of his meals contained one-handed candy bars,
- [00:00:51.080]chips, convenience foods, and soda,
- [00:00:54.080]and so Food in the Field really aims to serve farmers
- [00:00:57.550]and their families and help them make healthy choices
- [00:01:00.250]during the busy seasons of harvest, planting,
- [00:01:02.430]and year-round.
- [00:01:03.760]So I understand you're gonna do a little cooking
- [00:01:05.600]for us today.
- [00:01:06.433]What do you have in the plans?
- [00:01:09.410]Yes, so today we are gonna be making egg cups,
- [00:01:11.840]and I love this recipe because it is so simple.
- [00:01:14.410]It's nutritious and it's portable.
- [00:01:16.660]So to get started, what I'm gonna do
- [00:01:18.320]is I'm just gonna crack six eggs into a bowl here,
- [00:01:25.710]and then to those eggs,
- [00:01:27.550]I am going to be adding one quarter cup of milk.
- [00:01:32.810]And then I'm gonna add half a cup of salt
- [00:01:35.180]or half a teaspoon of salt, half a teaspoon of pepper.
- [00:01:38.520]And then I'm just gonna add one cup
- [00:01:40.230]of shredded cheddar cheese.
- [00:01:42.730]And then I'm gonna add one cup of broccoli florets.
- [00:01:46.530]Now you, I'm using broccoli florets today,
- [00:01:49.320]but really, you can use any vegetables
- [00:01:51.870]that you have on hand or according to your preference.
- [00:01:54.650]So Janet, if you were gonna be making these egg cups,
- [00:01:57.300]what vegetables would you use?
- [00:01:59.070]Well, I think broccoli is a great choice,
- [00:02:00.520]but also onions and peppers are a lot of times
- [00:02:02.680]my go-to for the breakfast mix.
- [00:02:05.750]Yum, that sounds amazing.
- [00:02:07.240]And honestly, I've used a variety of different vegetables
- [00:02:09.990]and you really can't go wrong.
- [00:02:11.410]So what I'm gonna do now is I am just going to scoop
- [00:02:14.830]this egg mixture into a non-stick muffin tin.
- [00:02:18.710]And we're gonna bake these at 350 degrees
- [00:02:22.160]for about 20 to 25 minutes,
- [00:02:24.170]or until that internal temperature
- [00:02:26.270]reaches 160 degrees Fahrenheit.
- [00:02:29.730]Now, I actually have some that are already done
- [00:02:33.590]that I'm gonna show you guys,
- [00:02:35.390]and you can see what those look like here.
- [00:02:37.470]And I just paired them with a piece of fresh fruit
- [00:02:40.175]for a complete, balanced meal.
- [00:02:44.210]Well it looks like a good grab to go
- [00:02:45.990]kind of breakfast.
- [00:02:46.823]So, what other tips do you have, Hannah,
- [00:02:49.050]as far as for busy farmers?
- [00:02:51.760]Well, it really is about all those small shifts
- [00:02:54.040]towards a healthier eating pattern.
- [00:02:55.620]So try including a piece of fresh fruit with your lunch,
- [00:02:58.380]switching to whole wheat bread instead of white bread,
- [00:03:00.500]or even just starting your day with a balanced breakfast
- [00:03:03.560]instead of a candy bar.
- [00:03:05.120]Well, certainly good suggestions.
